Spanish Bread

A sweet Pinoy afternoon merienda staple. A combination of sweet and soft bread with a luscious filling of butter and sugar. I would nominate a cup of coffee to go with it!

Ingredients

Look at that filling!

You will need:

Dough
  • 250g bread flour
  • 4 g yeast
  • 50 g sugar
  • 13 g softened butter
  • 4 g salt
  • 140 ml water

Filling
  • 50 g softened butter
  • 63g APF
  • 50 g sugar

Breadcrumbs

Instructions

  1. In a bowl of a stand mixer, mix all ingredients for the dough and mix at high for until it forms into a ball
  2. Knead for 5-10 mins until smooth and elastic
  3. Rest for 3o mins in a greased bowl with cover
  4. While waiting, move over to prepare the filling
  5. Combine all ingredients using hands
  6. After 30 mins, divide the dough into equal parts as possible,
  7. Flatten each dough balls with a rolling pin, and stuff with filling
  8. Roll over and tuck the edges
  9. Dredged in breadcrumbs and place in a greased tray, tucked part at the bottom
  10. Rest for 2-3 hrs
  11. Bake at preheated oven at 170C for 15-18 mins
