Simply Helen - Brownies

Ingredients

  • 1 cup butter
  • 1 cup chocolate chips
  • 1 cup white sugar
  • 3/4 cup brown sugar
  • 1 tsp salt
  • 1 tsp vanilla
  • 3 eggs
  • 1 cup flour, add 1/4 cup a little at a time if mixture is too runny. Ideal consistency should be thick but gooey
  • 1/3 cup cocoa powder
  • 1/2 cup chocolate chips - optional as toppings or any toppings of choice

Instructions

Preheat oven to 180 °C

  • Melt butter and chocolate chips. Let sit for 3 mins. Mixture should be a little runny. 
  • Add the sugars and salt into the melted chocolate mixture. Beat by hand or when using a mixer at medium speed, until just combined. 
  • Add vanilla and eggs one at a time. Beating lightly in between addition. 
  • Add the flour and cocoa powder. Fold, don’t over mix. 
  • Add the toppings of choice. 
  • Pour in a pan lined with baking sheet. 
  • Bake 35-40 mins.

Notes:
The sugar can be adjusted to: 3/4 cup white sugar and 1/4 cup brown sugar. Adjust salt to 1/2 tsp. 
For no sugar version, replace white and brown sugar with swerve granular and swerve brown with the same quantity. 
Stop and check at 35 mins. If toothpick inserted came out clean, it is done. If there are some batter sticking to the toothpick, bake at additional 2 mins while checking for doneness.
