Coconut Macaroons

Ingredients

  • 76g room temp butter
  • 75g sugar (optional)
  • 2 eggs
  • 1 can condense
  • 2 cups desiccated coconuts, loosely measured
  • 1 tsp vanilla extract
  • ¼ cup cake flour or APF or none at all

Instructions

  1. Preheat oven at 170c
  2. Combine flour and coconut milkCream butter in a bowl
  3. Add sugar (optional) and mix
  4. Add vanilla, mix
  5. Add egg one at a time until creamy
  6. Add condensed milk and mix by hand this time
  7. Add flour and coco mixture and fold
  8. Scoop into liners
  9. Bake for 18 - 20 mins

Tap pan before baking to rid of bubbles
